Of all of the food we make at Ackroyd's Bakery, black pudding is likely the one with the most storied (and infamous) history. Black pudding shows up in texts as early as 800 BC. In Book 18 of Homer's Odyssey, "Listen to me... there are some goats' paunches down at the fire, which we have filled with blood and fat, and set aside for supper; he who is victorious... shall have his pick of the lot." While our black pudding is different, the foundation of blood and fat and the cooking method is essentially the same.

Ackroyd's Bakery Black Pudding is made in the traditional method. We use beef blood, pork fat, finely ground oats, and our signature black pudding seasoning blend. Once the ingredients are mixed together, we use a sausage stuffer to stuff beef rounds, or cattle intestines.
We specialize in traditional foods at Ackroyd's. Much of what we make has been called "peasant food," in earlier historical context. Black pudding is a perfect example. In medieval times, working class families might own a pig. During the autumn slaughter, the pig's blood would be mixed with onions, fat, and spices so none of the animal would go to waste.
Fast forward to present and using blood as a food ingredient is often met with trepidation or even disgust. As we have become more removed from our food sources, the desire or need to use the entire animal is lost on many of us. Black pudding is both nutritious and delicious - The Guardian even named black pudding a "super food," in 2016. If you ever find yourself in the United Kingdom, black pudding is often served as part of a "fry up," alongside eggs, sausage, back bacon, beans, mushrooms, tomatoes, and toast or tattie scone. The fry up is both a meal fit for a day of hard work and (reportedly) a hangover cure.

In Gaelic, black pudding is called "marag dubh," with Stornoway often cited as the birthplace of Scottish black pudding. Coincidentally, our black pudding is often compared to Stornoway black pudding, though we try not to compare our version to anyone else's.
